“Anchorage’s bagel scene is thriving again with new business and others joining in”

Amy Nicolaisen, the founder of Wooden Spoons Alaska, has found success in Anchorage by filling the void left by the closure of the popular Alaska Bagel shop during the pandemic. She uses an old-school bagel former and shaper, the same one used by Alaska Bagel, to create her New York-style bagels. After perfecting her recipe, she opened her bagel Business in late October and has since gained a loyal following.

Anchorage has seen a surge of small-batch bagel operations, sparking a “bagel renaissance” in the city. These businesses have been met with high demand, as customers seek out the comforting and nostalgic taste of a good bagel. The resurgence of interest in bread-making during the pandemic has also contributed to the success of these bagel entrepreneurs in Anchorage.

Amy’s bagels, particularly her signature Nordic bagel, have received praise for their exceptional taste and quality. Her dedication to perfecting her recipe, despite initial failures, has paid off as customers flock to her shared kitchen space to get their hands on her fresh, hand-rolled bagels.

While she currently operates out of a shared kitchen space, Amy has plans to open her own full-service bagel storefront in the future. In the meantime, customers can enjoy her bagels with all the fixings from the 907 Bagel food truck, which has also seen success serving Wooden Spoons bagels.

The emergence of these small, targeted businesses, providing something unique to the community, has been well-received in Anchorage. For Amy Nicolaisen, her journey from failed experiments to a thriving bagel business is a testament to the perseverance and dedication of entrepreneurs during challenging times.
